So who wants to make Ruby Chocolate?

Technically you won't be able to use that name due to trademark issues I pretty sure, but there is nothing keeping you from making Amethyst Chocolate or naturally purple and pink colored chocolate. All it takes is a little treatment of one of the new beans we have in and you are on your way. The key here is that you these beans are unfermented, and we actually have three different ones, although only one turns this lovely color.

Mexican Oaxacan Lavados 2021 - In addition to using this to make Amethyst Chocolate, all three of the Mexican lavados (washed) are meant not for making into eating chocolate, but instead traditional and luscious Mexican style drinking chocolate.

The other two we have are Mexican Soconusco Lavados 2021 which boasts a strong and bolder chocolate flavor and Mexican Tecpatán Lavados 2021 that flips it around and is a bit more mild.

We also have in the newest crop of Dominican Republic Oko Caribe 2021 with its solidly steady flavors of wood and red fruits.

All of these are also available Wholesale, in addition to the Bicolor that we previously only had in Retail. Keep an eye out next week for the return of the direct trade Indian Idukki HIlls that we had last year.
