I am so bloody excited to announce we have a new trio of Brewing cocoa. We (and in this case by we I mean our whole staff here) have been working on this triple set of blends for over 6 months. I went into it with a general idea of what I wanted. Something that sort of showcased how a blend can, well, change. What I honestly didn’t expect, based on past history of my own taste preferences, was to freaking love the lightest blend we came up with.

I would like to formally present CODE DELTA Brewing Cocoa

 
 

This whole brewing cocoa thing came about because I tasted some brewing cocoas at a festival at some point and found them…..how to say this…..distasteful. Maybe they just were not to my liking and that is totally fair. What it made me want to do though is come up with something I liked, and that is mostly what I did. I noted I just didn’t care for the light roasts and that what appealed to me were roasts with more body without being overpowering. And make no mistake, some were overpowering and…..people loved them!

Just to name a few. Well, I longed for something more approachable and so I got blending and Shadow’s Silhouette and Ancillary Darkness were born. And those have a great following….and the itch to create started again…...

I had a vision and played around with a bunch of classic trio themes. The three fate, Clotho, Lachesis, and Atropos. Maid/Mother/Crone was looked at. Waxing/Full/Waning moon. Then the seasons came on and I played around with those but it didn’t quite click. Finally we had dialed in the taste profiles that seemed to give the transition from light to dark that I wanted and I was making tasting notes and realized I had fallen to one of my old chocolate tasting habits of noting what color they tasted like and inspiration struck……

….that is worth a side story trip. I have a mild and selective case of synesthesia which just means I sometimes taste colors or see colors when I taste something….

Anyway, the first blend was bright red and orange with yellow spots. The middle blend was so clearly summer green and and swills sky blue and the heaviest one way spirals of purple. Pretty much all the colors of the spectrum were there and my brain swung around instantly to a prism splitting light and I think it is pretty obvious where the labels came from since most prisms also look a ton line the Greek symbol Delta which stands for change….and it all clicked into place.

Oh, and just to head it off, contrary to what numerous people I’ve shown this too have commented about, it has absolutely no roots in some seemingly somewhat known cover of some 70s or 80s album by some group (Zepplin or Bowey or something) I don’t listen to.

What I do pay attention to and find so much of my inspiration from is Davinci and science. And so a nod to him and science via the Fibanacci spiral and the seeming alchemy of turning white light into an array of colors, we land here.
