Short and Sweet
I really enjoy being able to offer up a new origin. As the years go by, that gets more and more difficult.
I’ve tasted quite a bit of cocoa from the Philippines but mostly it was underwhelming or even down right bad. Thankfully, that seems to be turning around.
Last week we had a very limited supply of unique Nicaraguan Criollo (we only announced it to our mailing list subscribers) . This week we have this unique in its own right cocoa and in full supply. In house we have found either people really like it (the alchemist raising his hands) or find it too……uncouth. The subtle peated umami seems to throw some people for a loop.
