I'm super pleased to have this new origin in. It is from a totally different lot/source/location than we have had before.

Piura Blanco Organic 2022 - The aroma is an interesting mix of persimmon and apricot.  The immediate impression I get is one that is so very juicy and lively.  The chocolate is not very high but there is a bright, clean tartness that puts me in mind of certain lambic style beers.   The bitterness present is that of lime pith and couples well with a Persimmon astringency.   Due to being lively and dynamic  the extra sweetness of this recipe is not cloying as you might expect due to the punch of lime.  There is a very light but noticeably low nuttiness that rounds out the flavor. It is as always available Retail and Wholesale.

In other news I have something special brewing for this month’s Chocolate Making Kit of the Month
I have teamed up with Madie (our awesome Order support person) to create this month’s kit in conjunction with Women’s history Month and in support of Women in Chocolate.  .  She’s chosen our Belize 2022 and blended it with our really unique Bicolor/Pataxte that’s she’s fallen in love with.

Finally, it is kind of hard to believe we are still seeing the effects of Covid but we are.  We’ve been out of Deodorized cocoa butter for 6 months for just that reason.  If you have been waiting on it’s arrival, it is finally back in stock.  Retail and Wholesale amounts available.
