Mold, moisture, and cacao beans.

After hearing repeated concerns about mold on cacao beans, I wanted data instead of speculation. This study tested raw cacao from multiple origins, then deliberately pushed one sample through extreme moisture conditions to encourage mold growth. The results surprised me: even after visible mold growth, the tested samples came back below LOQ / non-detect for the toxin panel.
