Well, as much as I wanted something Ducking exciting, all I have today are some pretty routine updates for you all. Mind you, that doesn’t mean some of the products aren’t wonderful. I’m just don’t have many places to insert some of that classic alchemist humor. Here, maybe this will be entertaining. I call it Alchemist with Duck or maybe Alchemist not giving a duck.

The aroma is an intense thick, deep chocolate fudge and chocolate covered dried cherries.  And not to be a tease, after the first bite you know it was no false promise.  The chocolate flavor is simply huge.

I’ve decided to offer it as a Chocolate Making kit along with ones for the Bolivia 3 Tribes at 70% and Ivory Coast at 68%.

And I just realized I never told you folks that the new 2025 crop of Tanzania Kokoo Kamili is in. It too is available Retail and Wholesale.

The chocolate comes charging out with fudgy, thick chocolate flavor with a resonant acidity.  The bitterness and astringency are so restrained as to be below notice.  Unlike some years the sweetness here is more simple and clean, with less of a burnt or caramel note than often.

Introducing Chocolat Noir Brewing Cocoa

Ok, it seems I lied to you. This IS a bit exciting.

I’ve been experimenting and have come up with a new Brewing Cocoa. We only have a few bags of the beans to make the blend so only expect it to be around for a month or two.

Our richest, smoothest, most full-bodied yet.
No bitterness. No sweetness.
Just the full raw intensity of lush dark chocolate.

It also makes a delightfully refreshing cold brew.

Cold Brew

On the spur of the moment I tried this and it came out amazing.

  • 70 g (about 2.5 oz) Chocolat Noir

  • 400 g (about 7 oz) cold water

Place in a jar, shake well and refrigerate 24-48 hours.  Filter and enjoy.

You may find less cocoa works but I used the above proportions and it was a ducking delight.

As always, this isn’t your grandma’s hot cocoa...but it might be one she warned ya’ll about.

To wrap this up, another craft chocolate maker has hung up their apron. I've tried to help out and took the remaining beans off their hands. They should be here soon and as soon as I can get them roasted and their tasting notes all written up, you will be seeing them. I'm especially excited by one from Thailand that I've never had a chance to try.
