Kit of the Month Mystery

We recently had a bit of a game. I did not disclose the origin of the bean in the September Chocolate kit of the month and challenged you go take a guess with anyone who guessed correctly would get a $20 gift certificate.

It had deep chocolate notes with very clear notes of vanilla. Many people noted the bold chocolate and guessed one of the wild Bolivia, Uganda Semuliki or Vanuatu.

Unfortunately it was none of those and none other than

Spicy Kits

If you are new here you many not know about the tradition I have for spiced chocolate in the October and November Chocolate kits of the Month. October was a bit off the beaten path of ‘holiday or pumpkin spice’ and was a lively Za’atar with toasted sesame.

For November…..I’m undecided and would love your input and suggestions.

Things We’ve already tried:

  • Variations of classic pumpkin spice have been pretty well exhausted.

  • Fruitcake - done.

  • Plum pudding it probably too similar to fruitcake.

  • I’ve tried and failed to make a gingerbread spice. The dried ginger powder that I need to use is just too bitter.

  • Likewise with trying to get citrus in there.

  • There was a huge love/hate divide when we did peppermint. Riots happened.

  • Along the lines of the ginger, I can’t figure any good way to offer a mulled wine or spiced apple cider.

  • Just like the love/hate divide of the peppermint, the same happens with milk or dark chocolate.

So with all that in mind, give me some ideas that can both scream Autumn, are compatible with chocolate (no water) and that I can actually supply (no dried fruits, nuts, etc) to you folks.

What say you?

You can either suggest specific spices or ingredients or direct me to a bar you tasted that you would love for me to re-create.

  • Approx 3 hours each, part 1 chocolate making, part 2 tempering and yummy goodness

  • Obviously more for locals

All Day Apprentice Class - Eugene OR

  • An all day event and a little more in depth, Apprentice level I would call it.
