Behmor 2000 Modification Services
Some years ago we posted a video about modifying your Behmor roaster so that it could accept a thermocouple probe so that you could accurately profile roast your beans and not kind of guess where in the roast you were by smell.
Since then so many people have said thank you since it allowed them to take their roasting and thus their chocolate making to all new levels. I’ve also received untold requests to offer this service but due to the highly litigious nature of our society and the wary nature of insurance companies I just could not afford to take that risk……..
Until now.
I was finally able to demonstrate to our insurer that the modification posed no risk we could work out. I even pointed out that the Behmor might well be safer with the modification than the original since you both never have to guess where you are in the roast and with the rigid thermocouple in place, it completely eliminated the very rare case where the drum comes off its mount or accidentally opens. We challenged them to come up with a scenario where it could be of any danger and they couldn’t.
With that, we can now modify your Behmor, either before purchase or you can send your current one in.

It is difficult for me to put into words just how DUCKING much I love all three of these new beans and the luscious and chocolatey chocolate they produce with their deep chocolate notes, smooth and soft mouthfeel and complex array of flavors blending in a symphony of joy, satisfaction and satiation…..

The very first bite is incredibly chocolate forward and deeply sweet, almost verging on too much burnt sugar like sweetness. After that first rush of chocolate there is a mineral tang that keeps the flavor profile lively but not acidic.

The flavor of the chocolate is bold and has that density of flavor I have come to associate with so many wild harvested beans, regardless of origin. This one is sweet but understated.

The body is immense and it is a fight whether chocolate or deep fruits will win the flavor battle. There is acidity of dried fruits. I get persimmon and apricot. The entire profile is of deep, low toned fruits.
Finally, it has been ages since I've been able to offer cocoa butter in bulk but for the time being it is back.
